The Sioux Nation was reported to dig up tubers (thickened roots that store nutrients during dormancy) and eat them as part of their diet

Notes:

H. maximiliani is one of our favorite sunflower species! Like H. grosseserratus, the blooms are attractive to bees and beetles, and the seeds make tasty snacks for birds. Unlike H. grosseserratus, it doesn’t spread as aggressively so including this species in your gardens is easy! We recommend pairing with grasses for structural support.
